About cheese.

When storing cheese, do not forget that it is a living organism. In most cases, it should be wrapped in waxed paper or aluminum foil leaving room for it to breathe so that it will not dry out. If you are storing the type of cheese that needs to retain moisture, such as mozzarella, it can be wrapped in plastic wrap.

If you're going to shred cheese with a grater, spray the grater with cooking oil so the cheese does not stick. Also freezing the cheese slightly makes it easier to grate. You should only freeze the amount of cheese that you will need to grate for the recipe.

Basically you can store different kinds of cheeses together. Cheese with a strong aroma such as blue cheese should be stored separately in its own container so that other cheeses won't pick up the sharp smell. You should store cheese in the lowest part of your refrigerator, to guard against accidental freezing. The vegetable bin which usually has a higher humidity, is the perfect storage place for cheese.

Cheese that develops a small amount of blue, green or fuzzy mold is generally safe to eat, if you trim off and discard the moldy section. If the mold is pink or black, then the cheese is spoiled and will have to be discarded. Any cheese that develops a smell of ammonia should also be discarded.
